It appears I can only have one (1) entry. I also have a MQTT broker on 10.0.0.5 and 10.0.0.14

You can’t. You need to setup a mqtt bridge
I’m also intersted to have multiple mqtt brokers…
For cases where multiple MQTT brokers are required the best solution is to run the brokers in a virtualised environment outside HA.
By far the easiest, most robust and cost effective method is to run on a Proxmox hypervisor, using Mosquitto under LXC. You can run multiple LXCs requiring miniscule resources.
