Create thermostat using xiaomi temp sensors

Hi guys,
I am wondering if is possible to do in HA a “thermostat” like:

  • get temp/hum data from a zigbeetomqtt (xiaomi temp/hum sensors)
  • send to an mqtt topic on/off messages according to thermostat set

I have this in nodered now for every room, but I would like go for HA
