Disable unused climate hvac_modes

My Daikin ACs are reporting 6 HVAC modes which creates rather large cards with a lot of icons.

hvac_modes: fan_only, dry, cool, heat, heat_cool, off

Given I only ever use 2-3 of these, is there some way to disable the rest so that they don’t show up on the lovelace card?

Yes, you can override the mode choices. This AC has about 6 modes, but I only want “cool” and “off” to show:
