Is it possible to display daily energy as an entity from the energy dashboard? - The energy figures are collected from my ShellyEM - but that doesn’t reset at midnight, so I am unable to use that figure to display the amount of energy used that day, so figured that the House Supply Energy reading would be more reliable, but I can’t see this figure anywhere as a specify entity?

You could always run automation to store the value of your meter in a helper variable at midnight and turn on logging for that variable so you can get a daily snapshot.
For me I have a pretty extensive energy monitoring system in place using Powercalc that automatically creates daily kWh totals for every device (including my main Whole House power), but it’s the same idea that there is a device that resets every day at 12am that I can pull reports on.
