I am new to HA and this Supervisor option seems to be MANDATORY to get anything done. Why is it not enabled by default?
No. You can have a perfectly working installation without a supervisor. Have a look at the 4 methods: Installation - Home Assistant
It explains very clearly what you have and don’t have with each of them.
I followed the instructions to install on a NUC and Supervisor is NOT there.

One installation with the supervisor. Two without.
And even without supervisor you have a perfectly working HA with the pros and cons of the solution.
That’s what I used, so should I install another version and start from scratch. As I can’t seem to get things working.
Not knowing what “things” are I can’t answer.
And I don’t know either what installation method you chose.
If you are not very familiar with linux and are happy to use your NUC solely for HA and some add-on, then HA Operating System is the way to go.
