For a few days now some energy sensors have been returning absolutely improbable data which are obviously reflected in the statistics of the energy dashboard. Even if I correct the statistics, the problem remains because those sensors continue to show these absurd data. I emphasize that this has been happening for about three days, it had never happened before.

Not really. It would appear your device is sending junk data.
You could maybe filter it with an outlier filter sensor.
As long as the reading is correct when home assistant restarts this should work.
