I have a handful of water sensors around the house that I would like to create an entity card that shows the state along with the battery %
I can’t find a card that will show both at the same time. Any help would be appreciated.

I agree, multiple entity row is a good option. It will look like this:
Anther great option is the recently added heading card where you can add lots of entities. It will look like this:
Then you can also use a vertical stack in card (or horizontal depending on preferance) to combine other cards, in this example, I combined a mushroom template card with a mushroom chips card:
