I’m just looking at exposed entities on Nabu Casa and some of my ESPHome entities aren’t listed when I manage devices in HA.
Have I missed something?

not sure to understand what you mean there ? nabu casa is just the service that allows you remote access at HA, it’s not really linked at ESPHome !
Sorry, it was a bit of a knee-jerk question when an idea popped into my head. Now I’ve thought it through a bit more I can probably explain better.
I have a solar inverter with a Growatt wifi dongle that’s flashed with ESPHome. That means I can get all the stats about the solar production into Home Assistant.
What I was hoping is that I could expose the current production and total for the day on my Echo Show.
But nothing from the Growatt shows when I go to the device manager.
It could just be that those sensors aren’t compatible with Alexa.
Do you have / can you see any other ESPHome entities exposed? From other ESPHome devices etc…
Perhaps you could add a dummy template sensor to test?
Have you tinkered with the exposure settings? (below is from the Google equivalent).
Yes, I can see some other entities. I’m just doing some digging. Alexa only supports certain types of sensor. I think it doesn’t support things like W and kWh so they don’t get listed as being available to expose to Alexa.
