New to the forum, nice to meet everyone.
I am trying to setup ESPresense with my Iphone to detect it in a room. I confirmed i am seeing MQTT data in my Mosquitto broker but I cannot find my Iphone mac address.
I tried following instructions to enroll my iPhone but whenever I successfully pair I do not see the device in the finger prints section on the UI

How can I get it so that I can recognize my iPhone or Macbook reliably?

Depends.
Are you worried about being tracked on your home network. You can set it per network so, for example, on your home network it will be static mac but at airport it is randomized
My understanding is the feature changes mac address to obfuscate the connected device
Device trackers generally track by mac address so i would not expect tracker to constantly work as it has no way to identify it.
I dont see other mention of this but I noticed this when I switched to iphone and ubiquti device tracker stopped working
