Hi, I’m looking to setup a ‘Greeting’s’ Card, where it will say ‘Good Afternoon/Evening’ to the user logged in using the Sun.sensor.
Any ideas on how to set this up?

Take a look at the markdown card.
Not sure the sun sensor is the right way, should be able to do something with now().hour.
