Anything that can display a web page.
I’m using this: Raspberry Pi Kiosk using Chromium - Pi My Life Up on a separate Rpi3 behind the monitor.
When you say “separate”, it means that you have one Rpi for HA and one for display ?
Isn’t it possible to have all in one ?

Depends on, how you setup your HA server.
If you use HAOS on a RPI, the it won’t work, because HAOS is a headless system without monitor output.
You could use HA supervised installation, then it will be possible, but supervised install is not recommended for beginners.
I have a mini PC running HA, but the screen with the RPi kiosk is in completely different room. That is, what makes this approach more flexible.

I’ll buy a mini pc to install HAOS.
What did you install as OS on your mini pc ? Debian ? or did you let preinstalled Windows 11 ?
So i’ll keep my Rpi for displaying on my touch monitor.
For this last step (display on monitor with my raspberry), what is the easy / best method ?
Lauch browser (Chomium) in full screen ?
Debian Bullseye on the server.
Raspbian on the Pi.
