Hass.io take like 30min to startup at first install. (I think it download additional items). Long download time could cause issue for your new install.
RE: giving up on HA
Possible your original problem was “too big log file”? I have had issue where she card fill.with log and HASS crash and not able to access. I moved to 8core server from pi and I think more stable overall. Also I think docker install is better experience since only take 30second to have fully functional HA instance. RasPI OK but read/writes on sdcard can cause issue long term (just read sdcard I have seen Pi work years with other software) there are ways to mitigate these issues but this require planning

SO, what do you mean by that exactly, and how can one implement a timeout?
second, wold that be an option for lets say a NAs going off during night time, and starting up at daytime, and have the services (plex, iTunes) running on that timeout for that same period?
Would really be the answer to several of my issues here.
