Help creating a meat tenderizer

After hunting, you have to hang the animal for a certain time to get the meat tender. It is called tenderizing and to keep track of how long you have to hang the meat you have to calculate the time so the total temperature will be 40 degrees C. For example: The environment temp is 10 degrees C. That means that if the temp is the same every day the meat should hang for 4 days (10x4=40). Now, the temp usually is fluctuating and there is several tenderizing meters out there. None works with Home Assistant or other systems. If using an intelligent temp sensor, then I could make a script that does the same thing. But how would this script look like? Is there any intelligent temp sensor out there that could work for this?

Sounds like something the Riemann sum integral could help with to sum the temperature over time:

When set up, you’d take it’s value at the start and wait till it increased the right amount.
