It would be very useful if the sensor/binary sensor helpers allow you to define attributes and select the icon and its characteristics via template. Now it only lets you use templates to define the value.

Please read that again and make sure it is saying what you think it is saying.
You want to use a template to do something but now it only lets you use a template.
I had to read what you wrote 6 times but I think I understand now)
FYI there is also customize to change these things and you can use the UI to change icon, precision, name, and stuff as well.
I think there are prior requests for this…
