Is there some way to dynamically hide sensors ? It’s like having “options” expanded after a switch is “on” ?
There is hide attribute, but is there some way to changes it while HA is already running my configuration ?

I do get what you are saying, you want to be able to hide and show things on the fly, depending on the state of certain items.
You want to turn on or off a switch and have that action then show or hide other items, sensors and switches.
As of now, that is not possible, as 0.28 just got the ability to load groups and automations without a full restart, but the idea of showing and hiding things in the interface like you can do with javascript and html is not currently possible with Home Assistant based upon how the frontend is designed.
That would be a great feature actually, but I think that would most likely come in the form of a 3rd party frontend, which you can now develop yourself, so hopefully someone comes up with alternative frontends that can have these features.
I recently saw a post here on the forum of someone who nested a group with settings into another group, which may just work for you. I’ll see if I can find it again…
EDIT: I found it! Have a look here. It’s not perfect but I’d say it comes pretty darn close.
