I just updated to 7.1my system is super slow, even turning a light on and off (Zigbee) have a 5 seconds delay…
navigating to the interface is super slow too…

There are 2 things that may help.
Reboot the system if you have not already.
2, Upgrade to the latest patch release 2021.12.7
The release Notes indicate many thread related issues that have been resolved.

I also have a slow system after updating from 7.0 to 7.1.
I also see in my firewall a lot of lines of an ip v6 address that are blocked. As soon as I remove Home assistant from the network, the notifications in the firewall also disappear.
I can’t explain this, maybe one of you.
First of all, unless you are running IPv6 on your home network, disable IPv6 on your HA server, It is not needed and will not be used.
Since I do not yes run IPv6 ( my ISP does not support it) I cannot advise further.

How did you install HA? the process varies depending on the operating system.

Did that resolve the slow performance issue? Can you elaborate where/how you found and disabled IP6?

Btw to disable IPv6 : configuration /add-on backup and supervisor/ system > IP adress

After I updated HA to 2021.12.8 I have no more performance issues.
