Do you think Home Assistant could be used as a professional system ?
Like giving training and that people would be paid to install the system in several locations ?
Are there other examples of open-source systems that go to that level ?

A professional system would require to provide support. And since this is an open source project, you can’t guarantee short term fixes for possible bugs will be available.
On top of that, HASS is still in some sort ob “beta” state with it’s 0.nn versions. There are breaking changes now and then, so without proper supervision, you could easily break the systems of customers.
Maybe once a stable state is available you could think of it. But until then I consider HASS to be a solution for people who like to put effort into the system and accept breaking functionality now and then. Two things beusinness-customers usually don’t like at all.
I fully intend on using Home Assistant as a professional system, not to the extent that I would do training for others to install it, but me installing into my clients homes for sure. Even in the “beta” form it is in currently, HA still seems more reliable and more powerful then other commercial options I’ve used, for one reason or another.
When it comes to updates like mentioned above and the “breaking changes” while that is true, if my client is getting all the automation functionality they need, I have no real reason to update it until I’m sure there won’t be any issues.
Yeah, I think you could reasonably use it in a professional system. The one thing I would suggest would be scripting within the RPI to detect any errors and reboot the whole thing when needed. Now, this is only true if they are willing to (a) pay you extra to configure if they ever have any updates or (b) are willing to sign off with no more changes or updates to the system.

I what to buy HA training to explore some topics like: scenes, deeper lights setup and many others. I’ve spent a days trying to learn it by myself but I hadn’t moved more that a simple HA automation. So I really want to purchase some training by Skype for example.
Can anyone provide me exercises/lessons?
I would watch first all the YouTube videos of Dr. zzzz and the hookup
