Where is the button to cancel the thing? Backups keep getting created every day and they eat up all my drive space. I have manual backups (well they’re automatic really), and they’re configured the way I want them to. Why is there no button to stop automatic daily backups?

Try going to Settings, System, Backup, Configuration.
On a fresh install, that option does not exist (as it did not on my main HA before going through the “Set up backups” flow.:
I remember pressing “Set up backups” once, as soon as the feature was released, but I never continued the process, I just pressed X when I was presented with the encryption key. Which for some reason proceeded to make automatic backups even though nothing was configured.
You can disable encryption

Set it up and set it to “Never” as @francisp described
you gotta configure it a bit more, perhaps create a schedule, then you’ll get a button that lets you cancel it all.
