You can’t… they will drop off depending on your recorder/logger settings though… Or if you really have to you could stop HA and then delete the database but then you lose everything…

The logbook only presents data from the recorder. So it depends on that same purge setting.
It is a global setting. You can’t store different sensors for different numbers of days.
