I have large amounts of music on my plex server, but when I select my Edifier Speakers in Media, the plex option goes away??? Oddly enough the Google Nest option remains for my video doorbell!!??!!

How are your speakers “connected” to HA, i.e. what integration exposes them?
They’re connected via DLNA Digital Media Renderer integration. They show up in the Media tab, like any other media player.
