Let's build our own cheap cool Voice Assistant from Ikea

I found a couple of tutorials to modify a ikea frekvens led (FREKVENS LED multi-use lighting, black - IKEA) As they were sold a lot cheaper in germany.

First i just wanted to use it to show me things like the live electricty price, the temperature, other things from home assistant, but then i found out that this thing has a microphone already built in (it might not be the best - on th contrary i am quite sure it needs to be replaced for my idea)
So I thought would it be possible with a esp32 to build a local voice assistant for home assistant with this? Then I could use the 10x10 Led to show simple stuff like current prices temperature, if the dishwasher is running or not…etc and control the rest of my home as well? Maybe add a little speaker within the case?
I’d love to create something like this and i am fairly sure if someone would be willing to help - i could do it. So I am asking if there is someone who could help me with this or point me somewhere, where i can figure it out by myself?
