You type in the domain you’re using - the one your HA system is accessed with from the Internet.
If you haven’t yet set that up, then you probably don’t yet have a domain to use. You should look at DuckDNS - and the DuckDNS add-on also handles Let’s Encrypt for you.

No, you only need Let’s Encrypt if you want direct remote access, with either a domain you own, or through a service like DuckDNS.
