Looking for a wired home automation solution

i am currently planning to renovate a house. so far i use a lot of esphome/shellys/zigbee. i love esphome and it works really great. but in the new house really EVERYTHING should be wired. the house has 3 floors and it is possible to combine the first floor and the basement in a subdistribution in the basement. second floor + second floor in a subdistribution on the second floor. This is a lot of work and cables to lay - but it is possible.

i would like to have a system where all inputs, outputs, temperatures, humidity, shutters, door sensors are wired. even if homeassistant is offline the system MUST run. I would also like to install dimmers for led strips.

maybe you have ideas how and with what one could implement something good?
