i flashed Tasmota firmware and installed a Sonoff Pow to my tank water heater which stays on 24h. I can follow up power consumption and can switch on/off from HA.
The thing is; some ads saying they have these smart water heaters which follow up people’s hot water usage and can smartly decide when and how long to heat water. So, lets say if you generally shower during morning and leave home for work; it (supposedly AI) learns your habits and heat the water according to this schedule.
Now i have all the ingredients (i believe) but can’t decide how to cook. Is there anyone among us who realized this concept; in order not to try to reinvent wheel; can you share your style?
I considered automating my hot water tank and then, after some research, decided that trying to turn it off and on based on certain conditions was not a safe approach. As mentioned above, the water needs to stay above a certain temperature to prevent bacterial growth. So any automation that bypasses the built-in thermostat might not be a good idea.

I would never drink from any hot water system ‘not a kettle’. (teach kids the same early).
I have worked in water disinfection systems for utility companies (UV, Ozone, Aeration, Filtration and RO) for 6 years or so.
So agree the ‘Log Kill’ is the aim as a general priciple (by inference you can never kill all).
However, you have no oxygen (okay anaerobic is worse that aerobic) but you have no sunlight and no growth medium either.
Regardless ‘learning’ systems (infered by the OP) is simply not possible given the data he has available to post to such a system. And I’m aware of people using ‘nest’ (other f…kin expensive systems are available !) who after a year of ‘teaching’ have given up, turned it off, and gone back to timers.
Insulate the tank well, let it do it’s thang.
