MDI icon show as with ESP sensor?

In an HA entity, there is an option to set the MDI icon as one of several “show as.” I have a binary sensor set as moisture and the dashboard shows wet or dry. In an ESP moisture sensor, I’m using the same icon, but in the HA dashboard it shows as on or off, not wet or dry. Is there a way to customize the ESP sensor to show wet or dry? Thanks.

In esp define device_class: moisture
