Motion Sensor Automation help needed please

Good day!
I am new to all things HA and seem to be having issues creating automations. This is not the fault of the documentation or Ha setup guides. Its just me! Im a visual person and reading the documentation over and over get me no closer to understanding what it is i am reading. All the terms and jargin are new to me which makes understanding very difficult. I have made several attempts to get this automation going with no luck to date.
All you coding geeks are truelly a breed all your own!
It would be geatly appreciated if I can get some help please.

Here is what I am attempting to do.
My kitchen has wled under cabinet, toe kick lights on one controller as well as a ceiling light and a sonoff motion sensor. I should mention there is a alexa device in the room as well. I would like the wled lights to come on say 30mins before sunset at a 30% brightness, off white and stay on till a set time or motion is detected. At the set time I want them to change to a set led count (say led #88-150), color unknown just yet. This would light up just the floor led’s. I would like all lights to turn on if motion is detected to say 50%, color white but switch back to just the floor leds (#88-150). I believe this is called scene create, snap shot. Also have the motion sensor keep the lights on as long as motion is detected. I beleive its a timer or timer override thats needed.
Here is the catch, i want to be able to override these settings if an alexa routine is called. So if the wife is cooking late she can simply tell alexa to turn the lights on bright and all lights come on for her to do her magic.
I have tried and tried to get the scene create to work but no joy and the timer thing i simply can not wrap my head around. If anyone has a blueprint or samples I can see to help me understand it would be appreciated.

Is this far fetched?
Can it be done?
