Mysterious Communication

I am a relatively new user of Homeassitant, but I have already implemented some automations via NodeRed. I’m using Homeassistant on a Raspberry Pi 4, but I’m having doubts about my technical understanding and urgently need your help:

Why am I receiving push notifications via my Homeassitant app even though I’m not in the WLAN? I have used a “call service” node in NodeRed, where I have specified my smartphone under “Service” and which should send me push messages in certain situations. I have not made any other special settings and have assumed that this “call service” only works in my WLAN, i.e. when Homeassitant and my smartphone are in the same network at the same time.

How is communication still possible? I don’t want Homeassitant or Node Red to communicate over the internet with devices without my authorization. I am therefore wondering what and where I have to set something to prevent this. What kind of data is sent here? Is it freely accessible to everyone? Am I now vulnerable from the outside or can I be infiltrated? What settings regarding communication security etc. do I still need to make, both in Homeassitant on the Raspberry and in the app?

Thank you very much for your answer! My basic understanding has now been expanded a little.

But can the communication between HomeAssistant on my Raspberry and my smartphone app be restricted to the WLAN? Home Assistant should never send me any messages outside the WLAN.
