Panasonic Mono block Air to Water heat pump

Hello,
I have a bit older heat pump from Panasonic Mono-block ( WH-MXF09D3E8 ) that i today is heating my house with…
Today i control it by a temperature sensor and its only starting when the " Water Tank" is below 46°c and then stops when the “Tank” is at 52° Celsius.
There is no original WiFi connection for the control panel today so i was thinking to “hijack” the sensor and use a Esp32 between and let the esp “Fool” the original panel when i don’t want the pump to start…
What do you guys think about that?
Reason for this is that a lot of the house is already controlled by the electrical price ( charging car and washing machine and dishwasher… So why not?
