How can I use the HACS mini-media-player to play a music playlist on Plex? Does anyone have any example configurations inside their lovelace to show how they connect to their play playlist?

No, I actually found it too much hassle personally to collect and maintain music in Plex so I ended up using a streaming service and I was able to get that connected much easier than Plex. Best of luck to you.
