Ive got Razberry 7 Pro running 7.5 firmware (most likely 7.05 really looking at the version of SDK supplied) connected to a TubesZB PoE adapter. Is there a way of updating Razberry firmware remotely (i mean via TubesZB adapter), and if so where can i download the firmware from? Can i jump from my really old one directly to the latest one, or do i need to update one version at once?

are the same thing. Z-Wave versions are numbers not strings, and Z-Wave JS does not pad the numbers with 0

The safest way to update would be to temporarily transfer the Razberry to an RPi and use the Z-Way software to update. It will safely choose the correct firmware file. You’ll also get a chance to enable free functionality (via licenses) like Long Range support and Fast Communications (I think this enables a faster UART, not sure how necessary it is). Without using Z-Way you can’t enable these features, and I could be wrong by LR is not enabled by default.
If you don’t have an RPi maybe using a USB UART converter could work: Connect RaZberry via USB via USB-UART converter - Z-Wave.Me. If you use HAOS you could then install the Z-Way add-on and update it.
Theoretically you can use Z-Wave JS (via either HA or Z-Wave JS UI) to upgrade. You’ll need to navigate the graph and figure out the path to upgrade. Last I saw in a Discord conversation this was not working. Several users have asked about this and I’ve never seen anyone report back that it works.
