Sending data from sensor to custom component? And can the ESPHome-Flasher flash bin while keeping "eeprom" area safe?

Hi folks. I have a question, how can I send value from text_sensor to custom component where I do the comparison (from “eeprom”)
And can the ESPHome-Flasher flash bin while keeping this area safe? Or do I need to use another way to flash it?
