Sensor value: unavailable vs. last known value

Hello everybody,

Can someone explain me why home assistant detects that a device is unavailable show “empty values” but when I turn off home assistant using supervisor, home assistant shows the last known value?

How can I put it to show only “empty values” instead of the last value?

Because when HA is not running, HA does not receive state changes or unavailable messages. So it can only show the last state recorded.
