Is there a way to use the itead Sonoff switches without flashing an alternative firmware? I’ll flash if I have to, but trying to keep things simple for now.

You don’t want your Sonoffs to talk to a Chinese server. You want a local MQTT broker. Give Tasmota a try: https://github.com/arendst/Sonoff-Tasmota
