Sonoff Zigbee 3 USB dongle plus and firmware

I am new to HA, still on a very steep learning curve.

I am running HA natively on a old laptop, bought the Sonoff Zigbee 3 USB dongle plus and its installed and working.

I happened to come across a post talking about using a EmberZNet firmware, is this something I should be doing?
If not, is the Firmware I have the latest and most stable to use?

Are my settings all ok?

That version is quite old. There is newer firmware available on the Sonoff website. On the other hand, if your Zigbee mesh is working, no need to update.

Its a new setup, so difficult to tell on performance as I’m still buying, expanding and testing.

Is best practice to use this natively now, not flashing it with something else?

I just realised there are two versions of this, I have the ‘E’ version, if that makes any difference?

That was clear from the firmware version.
Since you are using ZHA, i don’t think it makes much difference if you upgrade or not. Should you want to use Zigbee2MQTT, it is advisable to upgrade to firmware 7.4.x so you can use the ember

Are you able to explain what Ember means and the advantages it brings?

Ember is the new driver for silicon labs based adapters in Zigbee2MQTT. The old ezsp driver is deprecated.
