Suggestions/help on automation for kitchen air purifier

I have a particulate sensor and an air purifier in my kitchen. I do not have a kitchen hood over my stovetop. Seeking suggestions for the design of an automation for this.

I think there are diminishing returns to running my little Winix C545 the lower the PM2.5s are, and since it’s very loud, I think I don’t want to run it continuously until it reaches ~0-3 PM2.5. My current idea is that I trigger the fan at a specific velocity of particulate matter increase (representing “still cooking”*), and turn it off once the PMs are below a certain threshold (20, perhaps) or after a timer; whichever comes first. Thoughts on that?

*Would be lovely if I had presence detection, but I don’t. MMWave sensors, please get super cheap soon.
