Thermostat and/or zone controller hacking?

I’ve just built a new house and have these thermostats and zone controller installed:

This controls hydronic heating in a concrete slab. There are wires from each of the thermostats back to sensors in the slab for each zone.

I’m not that concerned about automation for it because my understanding is that with this type of heating I just set it, with maybe a few minor adjustments, at the start of winter and forget about it. I’ve never had this type of heat before, but that’s what I’ve been told by people that have.

I am however a little curious about monitoring. Is there a way to tap into this somehow (I’m thinking the connection between the thermostats and the controller) to detect when each zone is calling for heat? I feel it might be interesting to compare this with ambient temperature in the different zones over time. Would I be better off just replacing the iLink unit with something “smart”? If so, any suggestions for something that works well with Home Assistant?

And a bonus question that is not Home Assistant specific: two of my in-slab sensors are in less than ideal positions (I took advice from the installer before I knew enough to question it) and now I can’t move them because the slab is poured and the house is built. Does anyone know of a way to replace the wired probe with a wireless one?

I have not even moved into the house yet and plan to live with the system for a while before I even consider any changes. This is more “thinking aloud” stuff than a real need today.
