This thermostat controls a large gas space heater. It only has 2 wires coming in, so I thought, “cool, I should just need a single pole switch,” but trying a Kasa light switch didn’t do anything.

Those are not mains wiring.
Some of them are cut off and not even capped, and the wire is very thin with thin insulation.
It is likely a dry contact.
Put a meter across those wires, I bet you see 24 volts AC on them when the thermostat is not calling for heat and 0 volts when it is calling for heat.
If that were the case (sadly I’m not there right now), do you know of something I could use to automate the switch? I’ve got Zigbee available in the space, maybe just a 24v zigbee switch or relay?
I’m used to using HA to maintain a thermostat for an outbuilding, I’m just not sure what to use in this particular case.
If I’m right, a dry contact relay or a cheapo thermostat should work.
You would need to test it first with a meter, I wouldn’t want you to plug a thermostat on there if there is actually mains present.
