In the video he explain that they are 3 sensors
1 with 4 -20ma output (the cheaper on amazon)
2 with 0- 5 v or 0-10v output
1 with rs485

You could use the 0-5V version easily with the ESPHome analogue input component (ADC).

Be aware though that the ADC on these boards is very non-linear at the extremes of its range.

it would require calibration for greatest accuracy.
