https://files.venstar.com/thermostats/colortouch/documents/T7900_OM_Install_FINAL.pdf I noticed that this works with home-assistant, if i get a water temperature sensor such as this https://www.google.com/aclk?sa=l&ai=DChcSEwi5g72NhtzdAhULf34KHaoxCFgYABAcGgJwYw&sig=AOD64_21Tsz0Kk0ZjuLKWhdZyURl81ethQ&ctype=5&q=&ved=0ahUKEwiXjbqNhtzdAhURGDQIHXCHDLEQ2CkI7wI&adurl= can i theoretically plug is in on the SENSOR node of the T7900? (page 76). So… once its recognized by the thermostat i can have home-assistant pick up the temperature
Not sure about that thermostat, but I use that temp sensor connected to https://www.amazon.com/dp/B00QQNG3HY for my pool.

sorry, not sure how the door sensor is supposed to help?
It has a connector for a DS18B20 temperature sensor. Just ignore the door sensing functionality.

You may also get ZWave door sensor that accept temp sensor like fibaro or raspberry pi and expand function. Esp8266 may Aly use yemp sensor
Anyway, yes to your answer I believe
EDIT
Look like @NotoriousBDG already posted link to fibaro ZWave sensor
