Note, minimum disk and memory requirements are not specified. So, depending on what you want to do, you may want to start small or go big.
As a reference, I run a Raspberry Pi 4 with 4 GB of memory and 32 GB of disk. I am only using ~25% of memory and ~25% of disk.

I would say get the most RAM & storage you can afford. That will give you headroom for future growth. My NUC is 5+ years old & it came with 16GB RAM & 250GB SSD. It chugs along nicely at 18% RAM usage & 30% disk usage (with lots of historical data stored in InfluxDB) & the CPU only works hard when ESPHome is compiling firmware.

It comes with 8GB of RAM so that should be OK for now.
Looking at SSD there is not much different in price, so may get a 1TB.
As may what to use an NVR like Frigate as i expand.
Probably it will not. If you can afford it or you can stuck it in your comp go with 32 GB or more. SSD 512 gb or more. I think that I started with 16 gb and 128 gb ssd and tought this is way too much. As things progress and you put more and more things the more space and ram you will need. And it will progress.
