In the Tuya docs there is an option “Force color support” under the light options. However, I can only find the common options (under Integrations -> Tuya -> Options). The light options are not listed there.
Where can I set this option?

I don’t usr Tuya, but I assume device specific settings are available when you choose a device in the field “Select the device to configure or leave empty to save configuration” from your first screenshot.
Ah you’re right! Awesome!
I had already tried that field but I expected the options to pop up below or something, but you have to click submit after selecting and the options will popup in a new dialog! Don’t forget to hit submit again without selecting any device to actually save the changes.
