Why cant we easily convert uptime sensors in seconds to human readable?

Why?

So I added a few uptime sensors in that are feed from netdata. They are in seconds, and thats OK.
I was able to get a template sensor to convert it to “weeks,days, hours, minutes”

But it would be awesome to have an easy way to convert time measurements integrated in HA.

Yes, this!
Using simple timed conditions rather than long template coding for example to compare dates.
