i try to exclude a component from z-wave-j-ui, nut delay of 30 sec is to short. how to force the delay (from 30 to 60 sec ).

Because the software needs a default value, and 30 seconds is going to be plenty of time for most people to press a button on a device.
If you need a longer time, you are welcome to increase it in your settings.
