What are some good options out there for controlling light switches without using any wireless technology (ie wifi, zwave, ziggbee)? Is there anything out there that is good and not crazy expensive that uses a low voltage control wire instead? And if so, what would be the best way to control these with home assistant? I am looking for quality and reliability, not something that is hob-knobbed together.
Not sure what you mean by low voltage control wire, but above is Insteon which I use throughout my house. Super reliable.
Low voltage? Not really. These are basically non-existent because almost nobody has an extra set of wires running to all their switch boxes, or wants to install them, and the NEC (US) has lots of restrictions about low voltage sharing a box with lighting/power so the circuit would have to be carefully categorized and spec’d for proper compliance.
The closest I’m aware of is MODBUS, e.g. over RS485 serial comms, more commonly used in industrial equipment or Tesla Powerwalls, but also sometimes in (non-US?) hotels — but then you end up with something like this in your house.
Home Assistant supports KNX and X10 standards which use power line communications, but product selection looks pretty limited. Even Insteon, with their large fan base, are so niche they had a very public, very anti-consumer shutdown in 2022 to be aware of.
Lighting over Ethernet is not really a thing.

Knx uses low voltage twisted pair, not powerline (there was a PL extension that’s discontinued since ?10 years?)
There is also a plethora of manufacturers for wall switches, control panels and actuators.
But afaik its not very common in US (different wall switch sizes may not let you use European switches). And it’s definitely not cheap.
That’s going to be hard
When I was building my garage I can across some (semi) commercial light fixtures that had a 0-10v control line that could go down to a dimmer to control the light. I was hoping there were switches that had a similar concept that could be controlled remotely in a similar manner.
It’s hard to search for. I keep getting either the common smart switches with wireless technologies or switches/dimmers that control a low voltage circuit. Not really finding much that uses low voltage to control a standard voltage device.
