I added a utility meter and cannot edit it to “net consumption” after the fact of creating it. Would be helpful to correct mistakes afterwards.
I assume you are talking about using the UI?
Because you can definitely do this if you configured the utility meter in YAML.
In the UI exactly. I updated the title.
As I thought home assistant is moving away creating them from the UI was the way to go.

It depends on the integration type. Some will always have YAML, even if they have a UI too. See: https://www.home-assistant.io/blog/2020/04/14/the-future-of-yaml/#the-future-of-yaml
Some UI implementations are not as full featured as the YAML version. The ability to reconfigure an entity via the UI is usually the biggest difference. It can be implemented, it just takes a developer willing to do so.
