Forgive my ignorance, but can you not just add a water flow sensor to the hot water line?
Well that’s how you’d get the data yes, but if you have the data and added it (and having one on the cold water line) you’d see cold+hot - but what it should be is cold = total-hot
Is this related to the energy dash, or generally?
If general, I’m sure you could template that exact equation.

like for energy consumption, it would make sense to monitor different water outlets seperately.
I am in the progress of getting several new water meters installed - for each floor, for the washing machine, for the garden supply, for heating - and for the warm water supply.
All those meters come with a sensor, that I can connect to esp’s …
The only area, where no new meter will be installed is the main water supply, since we’re not allowed to change this specific meter.
And I think, this would be the best approach to get a reliable statistic for your water usage.
But - I agree, there should also be a logic like for the energy dashboard, where you could track your total consumption - and “by device”
