Thinking of using this in the shower and bath to detect usage. It looks fairly waterproof. Shower i think should work fine but submerged in bath for a long time ? Mmm maybe not.
I don’t think it will last. You could use a humidity sensor instead?

I am using those but it takes a while to ramp up. I’d like to get something more instant if possible.

This project immediately popped into my head:
[Dog Water Bowl Sensor]
One of my more useful & simple automations is a dog water bowl sensor. It uses an Aqara Water Leak Sensor to monitor when the water dips below a certain level. Then I use Node-RED to get a text and a pushbullet to refill. Keeps our dogs hydrated, especially in this hot summer. Huge points on the WAF scale.

You should go for a capacitative sensor instead.
It can detect a liquid without being in contact with it
