I bought a Local Bytes smart plug after advice from this community. How do I connect this to HA? Is it Zigbee, or Wifi, or Bluetooth, or what? Do I have to press the on/off button, or similar, to get it into pairing mode?
As usual with things from China, there were no instructions with it at all.

Tasmota (ie wi-fi, but you also need MQTT). Getting started instructions here:

The lack of an instruction leaflet was more of an environmental factor.
We felt that it would be immedaitely binned 99% of the time.
The getting started guide & video linked above are the best places to start (assuming you went for Tasmota)
