I would do it slightly differently:

1). Create a Helper for your TRV’s so that if any of the TRV’s are open then Heat is required.

2). Create an automation that that triggers on the state change of the Helper (1). In the automation check if the time is in the time range you want heating on and if so set the boiler relay on, if not set it to off.

You should be able to use Helpers for the time range (it should also be possible to use the scheduler).

I would suggest you look at Database of Zigbee devices compatible with ZHA, Tasmota, Zigbee2MQTT, deCONZ, ZiGate and ioBroker to see which ones are supported and available in your area.

I use Zigbee2MQTT, but I would like some advice on the products

Here are a few I would recommend.

The ZbMiniR2 is meant for lighting and is only rated up to 10A. You need to check how much amperage your boiler draws and get a relay that is rated for at least 25% above that.

You are right advising caution with the amperage, however they won’t connect it to the AC side, rather on the side that receives commands from the thermostat.

If it’s not connected to the AC side, then they need a dry contact relay or they’ll fry the thermostat

So the ZBMINIR2 isn’t good? Which device do you recommend?

If you’re really not switching AC, then the Shelly 1 has a dry relay & should work for you

I don’t touch the boiler power terminals, so I’d like to mount this relay on the thermostat terminals. Shelly 1 is fine, but it’s just a shame it’s Wi-Fi and not Zigbee.

Just for the esthetics, you could keep the termostat or put a blank plate over the hole and on the boiler find the terminals from the termostat and place the relay there Instead.
But that’s up to you.

You could leave it like it is as a backup in case your HA goes down during christmas eve. Your thermostat has a mode to not control heating. Connect your Shelly 1 in parallel with the thermostat contacts.

There are zigbee relays and if you (plan to) use zigbee, I would avoid using WiFi for this.
